Rehydrating dried whole eggs is simple! To reconstitute the equivalent of one fresh egg, mix 1/4 cup (3 tablespoons) of dried whole eggs with 1/4 cup (60ml) of warm water (100°F/38°C). Let the mixture stand for 3-5 minutes, or until thickened, then whisk vigorously. The rehydrated eggs can then be used in any recipe that calls for fresh eggs.
